A Delicious recipe for prawns with avocado canape. These are a great appetizer for any get together.
Preheat the oven to 425 degrees F.
In a saucepan, combine the butter and milk and heat until the it comes to a gentle boil. Add the salt. Combine the flour and baking powder and add to the milk mixture. Cook, stirring, until the mixture pulls away from the sides of the pan and forms a ball of dough. Remove from the heat and place in the bowl of a mixer. Add the eggs, 1 at a time, completely mixing before adding each one.
Place into a piping bag fitted with a large, plain tip. Pipe small golfball size rounds onto parchment lined sheet pans.
Bake for 10 minutes. Lower the heat to 375 degrees F and then bake until golden brown, about 25 more minutes. let cool completely.
Just before serving. Mix the mayo and mustard together. Peel and dice avacado.
Slice off the top 1/3 of the pastry. Fill with sauce, avacado, prawn and arugula leaves.
