An easy pumpkin chocolate chip cookie recipe for the fall lunchboxes.
Preheat oven to 350°F
Line baking sheet with parchment paper and set aside.
In bowl of stand mixer beat the butter and pumpkin together until evenly combined, about 2 to 3 minutes.
Beat in the sugars.
Add eggs, vanilla and beat until smooth.
Combine flour, baking soda, spices and salt together in a bowl then add in 3 increments to the butter mixture, beating in the dry to the wet.
Stir in chocolate chips and pecan chips.
Drop by rounded tablespoon onto lined baking sheet and bake for 9-11 minutes until centers are just set and edges are golden.
Allow to cool for 3-4 minutes on baking sheet and then transfer to wire rack to continue cooling.
