Raisin Bread Recipe

Who does not love raisin bread? What a delicious treat with some butter and honey.

Ingredients

1/4 cup warm water
2 1/2 teaspoon fresh yeast
3/4 teaspoon salt
1 teaspoon vanilla
1 cup milk
1 1/2 teaspoon cinnamon
3 Tablespoons coconut sugar (or can substitute granulated sugar)
3 Tablespoons melted butter
3-4 cups spelt flour
3/4 cup raisins
1/2 cup ground oats

Directions

Combine together water, yeast, salt, vanilla, milk, cinnamon, sugar, and 2 cups of flour. Once incorporated together add more flour until dough starts to pull off the sides of the bowl. Knead the dough for about 15 minutes.

Add in raisins and knead in. Don't knead in raisin too much as it will make a flat bread. Roll into a ball and place in a bowl, cover with plastic wrap. Let rise for about 2 hours, or until its doubled in size.

Grease a loaf pan with oil

Punch the air out dough and form into a loaf, brush with some water and roll in oats. Place loaf in prepared loaf pan and cover with a damp cloth. Let rise again for about an hour.

Preheat oven to 400F.

Bake for 30 - 35 minutes or until it makes a hollow sound when you tap it. Turn bread out of pan right away (so bread doesn't sweat in pan) and let cool on a wire rack.
