Red Velvet Three Layer Cake Recipe

A lovely recipe for a red velvet three layer cake. This is a perfect cake for valentines day or any special occasion.

Ingredients

CAKE
1/2 cup unsalted butter, at room temperature
1 1/2 cups granulated sugar
2 eggs
6 Tablespoons red food coloring
1 teaspoons vanilla extract
1 cup buttermilk
5 Tablespoons unsweetened cocoa powder
2 cups cake flour
1 teaspoon salt
1 teaspoon baking soda

FROSTING
1 cup butter, at room temperature
1 cup cream cheese, at room temperature
5 cups confectioners sugar
2 Tablespoons vanilla extract

Serves - 12

Directions

Preheat oven to 350 degrees.

Grease and flour 3 8" cake pans.

Beat butter and sugar, until light and fluffy. Add eggs one at a time. Add red food coloring, vanilla, and butter milk. Mix until incorporated.

In a separate bowl, sift together cocoa, flour, salt and baking soda.

Add flour mixture to butter and sugar, and mix slowly. Once incorporated, mix on a higher speed for about 3 minutes.

Evenly divide batter between 3 prepared pans and bake for about 30 minutes, or until an inserted toothpick comes out clean. Set to cool, once cool to touch remove from pans, and let cool completely on a wire rack.

FROSTING

Beat the butter and cream cheese until smooth. Add confectioners sugar, and vanilla. Mix slowly, until all is incorporated. Then beat on a higher speed till light and fluffy.

Spread frosting evenly between layers, on top and sides.
