Rice Pudding With Berries Recipe

Here is a very simple to make rice pudding that is a baked in the oven on low heat. A creamy delicious pudding yummy when it is warm or cold.

Ingredients

Serves 2

Pudding
scant 1/2 cup white rice
1 1/2 cups milk
2 Tablespoons caster (fine) sugar

Berries
12 oz./300g mixed frozen summer berries
1/4 cup caster (fine) sugar

Optional
Fresh berries for garnish

Directions

You can easily double the recipe if you are making for more people.

Preheat the oven to 325F.

Grease a 1-quart oven proof baking dish with butter.

Add the rice, milk and sugar and cover with foil.

Place into the preheated oven and bake for one hour until the rice is tender.

Remove from the oven when ready.

Meanwhile place the frozen berries and the sugar into a saucepan. Cook over medium heat for about 5 minutes until the fruit is tender and the sugar dissolved.

To serve, dish out the rice pudding and spoon the berries onto each portion.

Delicious warm or cold.

Add fresh berries if desired to garnish and make even more delicious!
