Ricotta Pancakes Recipe

This ricotta pancake recipe is heavenly topped with fresh fruit and a drizzle of honey.

1 cup ricotta cheese
3/4 cup buttermilk
1 whole egg
1 egg white
2 teaspoons granulated sugar
1 teaspoon orange or lemon zest
1 cup all purpose flour
1 teaspoon baking powder
1/2 teaspoon baking soda
1/4 teaspoon salt

Makes about 8 pancakes


In a blender, blend together ricotta, buttermilk, egg, sugar and zest until smooth.

Pour into a large bowl, and mix together flour, baking powder, baking soda and salt. Mix this until smooth.

Heat up a skillet and coat with cooking spray (if using non stick don't worry about spray) Ladle about a 1/4 cup batter in pre - heated skillet. Once golden on one side (about 2 minutes) flip and cook for another 2 minutes.

Serve warm with maple syrup or some jam
