Roast Chicken Breasts Recipe

This roast chicken breast recipe uses simple ingredients is just a few steps to a delicious dinner. Serve with risotto or roasted potatoes.

Ingredients

Serves 2

2 chicken breasts, skin on
1 teaspoon thyme, chopped fine
1 teaspoon garlic powder
1/2 teaspoon pepper
2 Tablespoon olive oil

Directions

Preheat your oven to 450 degrees (F).

Heat a dry pan on the stove over medium heat.

With the chicken breast, loosen the skin to create a small pocket.

Place the butter under the skin.

With the olive oil, rub the chicken then season with thyme, garlic powder, salt and pepper

Once the pan is hot, place the breast skin side down. Leave the breast for about three minutes, or until the skin has a nice golden brown crust. Remember not to move it in the pan.

On a baking sheet place the breast and put into the oven for 15 minutes.

Check (after 15 minutes) with a meat thermometer (160F), and test by either poking it with a fork to see if juices run clear, or by leaving your fork in for 30 seconds and testing it on your hand to see if it’s hot.

If it fulfills any of the 3 above, take it out, let it sit for 5-10 minutes so the juices won’t run out when you cut it.
