Roasted Garlic Potatoes Recipe

Ingredients

3 pounds potatoes, skins on
1/4 cup olive oil
1 1/2 teaspoons salt
1 teaspoon freshly ground black pepper
3-4 garlic cloves (2 Tablespoons) chopped garlic
2 tablespoons minced fresh parsley
a couple sprigs of fresh lemon thyme, cut in chunk pieces

Directions

Preheat the oven to 400 F.

Line a baking sheet with parchment paper.

Sprinkle the thyme pieces onto the paper.

Wash the potatoes, cutting off any blemishes and cut into halves.

Place in a bowl with the olive oil, salt, pepper, and garlic; toss until the potatoes are well coated.

Transfer the potatoes to the prepared pan, laying on top of the thyme in a single layer.

Place into the preheated oven and bake for 45 minutes to 1 hour or until browned and crisp.

Flip the potatoes twice with while they are baking in order to ensure even browning.

Remove the potatoes from the oven, season to taste, and serve hot. Garnish with fresh thyme.
