Roasted Honey Dijon Potatoes Recipe

A really tasty way to prepare dijon potatoes


8 medium to small sized Yukon gold potatoes
1/4 cup dijon mustard
1/4 cup vegetable or olive oil
2 teapoons honey
2 garlic cloves, minced through a garlic press so it is very small
salt and pepper to taste
1/2 teaspoon sweet red pepper flakes
1 sprig of parsley, finely chopped

Serves 6-8


Preheat oven to 375F.

Grease a baking dish.

Peel and wash the potatoes to remove some of the starch. Dry the potatoes with paper towel or clean dish cloth.

Stir together mustard,oil, honey, minced garlic,

pepper flakes, salt, pepper and chopped parsley.

Place the prepared potatoes into a bowl and pour the sauce over. Toss to coat potatoes well.

*Note: At this point, depending on the size of potatoes you chose, you may feel you want extra sauce. If so whip up a 2nd batch and add it to the potatoes.

Transfer the potatoes into the prepared baking dish and place into the preheated oven.

Bake for 35-40 minutes or until potatoes are tender and crispy on the outside.
