Roasted Vegetables And Sausage Casserole Recipe

This easy to make one dish meal is tasty and satisfying and a good way to prepare your favorite sausage ring.

Ingredients

3 medium sized yellow flesh potatoes, washed peeled and cut into 1/2 inch rounds
2 carrots,peeled sliced into long pieces
1 medium sized onion, cut into 8 wedges
1/2 sweet red bell pepper, cut into wedges
1 ring of Ukrainian sausage (or your favorite sausage)cut into one inch chunks
2 Tablespoons olive oil
2-3 cloves of garlic, minced
1 sprig fresh savory, chopped
1/2 teaspoon salt
1/2 teaspoon paprika

Serves 4

Directions

Preheat the oven to 400F.

Grease an oven proof baking dish with olive oil.

Place all the prepared vegetables and sausage into a large bowl.

Put the olive oil in a small bowl, add the minced garlic, chopped savory salt, pepper and paprika and stir to combine.

Drizzle over the bowl of vegetables and use your hands to toss and coat each piece.

Transfer to the prepared baking dish and roast for 30-40 minutes.

Remove from oven when vegetables are fully cooked.

Top with fresh savory leaves and serve.
