Speedy Cheese Quesadilla Recipe

A very quick and nutritious recipe to whip up for a satisfying lunch.
(Serves 1-2 people)
2 large tortillas
1 cup cheese, grated
1 can black beans, drained and rinsed
1/2 cup corn kernels, defrosted
1 handful spinach
1 tomato, diced
1/4 small red onion, diced
Olive oil (for frying)
Heat a large frying pan and drizzle a bit of oil to fry red onions until softened.
Take onions from heat and put into a bowl, setting aside.
Add a bit more oil to the pan and put 1 large tortilla.
Keep heat on medium, and add beans, corn, spinach, tomato, fried onions, and cheese.
Top with tortilla and let brown.
When the bottom is browed, carefully flip to brown other side and let the cheese continue melting.
Serve on a large plate and cut into wedges.
