Preheat oven to 375 degrees F. Lightly grease a large baking sheet.
Peel and rinse potatoes, then slice lengthwise into wedges.
Crush garlic cloves with salt, then combine with the oil, cayenne and parmesan cheese.
Toss potato wedges in the oil mixture until evenly coated.
Arrange on a baking sheet.
Bake for 40 - 50 minutes, or until potatoes are tender and golden brown.
