Spinach And Ricotta Pasta Recipe

This spinach and ricotta pasta recipe is easy to make and even the kids will try it.

Ingredients

500 grams large pasta shells
1 large onion, diced
1 Tablespoon vegetable oil
4 cups fresh spinach, stems removed and chopped
1/4 cup butter, cubed
1/2 cup flour
3 cups milk
1 1/2 cup ricotta cheese
1 cup bread crumbs
2 cups parmesan cheese

Directions

Pre-heat oven to 350 F.

Cook pasta according to package directions.

Meanwhile, in a large skillet, fry onions in oil over medium heat until translucent and golden brown, about 7 minutes.

Add spinach and cook 2 minutes, until spinach is wilted.

In a large saucepan, melt butter.

Stir in flour and milk and bring to a boil.

Reduce heat and and stir in ricotta until smooth.

Add pasta and mix well.

Transfer to a greased 13-in. x 9-in. baking dish.

Sprinkle evenly with Parmesan cheese followed by breadcrumbs.

Bake, uncovered,for 25-30 minutes or until bubbly.
