In a large pot of boiling water, cook pasta according to package directions. Once cooked remove from hot water and run until cold water to chill.
Cut tomatoes and cucumber into bite sized pieces.
In a small bowl combine dressing ingredients, toss tomatoes, cucumbers and cold pasta in dressing to coat.
In a large salad bowl toss spinach with pasta and vegetables, Pour any remaining dressing over top.
Sprinkle salad with fresh cracked pepper and salt.
