Spinach Filo Pie Recipe

A very flavorful recipe for light and crispy spinach filo pie, also called Spanakopita.

3 (250g) boxes chopped frozen spinach, thawed and well drained
2 cups feta cheese
1 cups ricotta cheese
3 Tablespoons parmesan cheese, grated
4 spring onions, finely chopped
4 eggs, lightly beaten
3 Tablespoons parsley, chopped
10 sheets filo pastry
Olive oil


Preheat oven to 350 degrees F. Grease 9x9 inch baking dish with olive oil.

In a large bowl, combine all filling ingredients together and mix well to combine.

Cover filo pastry with a clean, damp cloth.

lay down the first sheet of filo. Continue to lay down four more sheets, Lightly brush each sheet with olive oil.

Place the spinach mixture on top of the filo and spread evenly. Layer five more sheets of filo and oil over the top.

Tuck edges down and bake for 40 minutes, until top is crisp and golden.
