Heat a large frying pan to medium heat with oil, Cook mushrooms for 5 minutes, stirring occasionally.
Once mushrooms are browned, stir in cut pepper and cook 2-4 more minutes just to soften up the peppers.
To make the dressing, Place all ingredients in a jar, seal tightly and shake well.
In a large bowl toss cooked vegetables with fresh spinach.
Spoon salad into individual serving cups if desired.
Garnish with quartered hard boiled eggs.
Serve with dressing on the side or drizzle over salad just before serving.
