Stir Fry Veggies Recipe

This stir fry veggies recipe is easy to make and can be the main meal for a vegetarian, or serve as a side dish along with a meat dish.

Ingredients

Serves 4

2 cups white rice
3 cups water
2 teaspoons olive oil
3/4 cup onion, thinly sliced
3/4 cup celery, thinly sliced
1 medium sized red bell pepper sliced
1 1/2 teaspoons fresh ginger root, grated
1 1/2 cups carrots, thinly sliced
1 1/2 cups broccoli florets
1/2 cup vegetable broth
salt and pepper, to taste
cayenne pepper, to taste (optional)

Directions

Add rice and water to a medium cooking pot and bring to a boil with the lid off.

When the mixture boils, reduce the heat to simmer and cover with lid.

Cook for 15 minutes until tender and all the water has absorbed.

While the rice is cooking prepare and cook the vegetables.

Heat the oil in a large skillet over medium-high heat.

Start with the onions and celery, cook for 2 minutes.

Add red pepper, and grated ginger root and cook for 2 minutes.

Add carrots and broccoli florets and cook for 2 minutes.

Add the vegetable broth, and salt and pepper to taste.

Stir fry veggies until just tender and crisp.

Stir in the cooked rice and mix until veggies are evenly distributed.
