This stuffed pasta shells recipe has only a small amount of parmesan cheese in the meat mixture, perfect if you are in the mood for a pasta dish that is light on the cheese.
Preheat oven to 350 degrees F.
Grease an oven proof baking dish with a little olive oil.
Start by heating a skillet on the stove top, add the chopped onion and garlic, cook until the onions soften.
Add the ground beef and salt and cook until no pink shows.
Transfer the cooked meat mixture to a mixing bowl and set aside to cool.
Mix the parsley and parmesan cheese together and stir it into the meat mixture.
Cook the jumbo pasta shells until tender to bite (or al dente).
Rinse under cold water and drain.
Pour the spaghetti sauce into the baking dish.
Stuff the shells with the beef mixture and place them into the prepared dish. Cover the pan with aluminum foil.
Bake, covered, for about 15 minutes, until heated through.
Garnish with freshly chopped parsley.
