Sweet And Sour Ribs And Cheesy Mac Shells Recipe

Ingredients

Makes 6 servings

Sweet and Sour Ribs
4-6 pounds pork spareribs or pork loin back ribs
1 teaspoon salt & 1 teaspoon freshly ground pepper for rub
1/2 cup granulated sugar
1/2 cup packed brown sugar
2 Tablespoons cornstarch
1 cup ketchup
2/3 cup cider vinegar
1/2 cup cold water

Serves 6
Cheesy Mac Shells
1 pound shell pasta
1/2 teaspoon salt
3 cups milk
6 Tablespoons all purpose flour
1/2 pound grated cheddar cheese, about 2 cups
1/2 teaspoon salt & 1/4 teaspoon ground black pepper

Directions

Ribs:

Preheat the oven to 350F.

Use a sharp knife to peel the membrane off the meat of the ribs. Trim away extra fat and place the ribs into a large bowl.

Have ready a roasting pan that has a rack that fits in the bottom as you will want to cook the ribs on a rack so the fat drips off the ribs.

Season the ribs with a salt and pepper rub then transfer to a the prepared pan with the rack.

Place into the oven and set the time to bake uncovered for 1.5 hours.

Meanwhile make the sauce. In a small saucepan stir together the sugars, cornstarch, ketchup, cider vinegar and water until combined and smooth. Turn on heat and bring to a boil. Cook for 2 minutes or until thickened. Shut off.

When the timer goes off,remove the ribs and rack from the roasting pan. Drain and discard any fat. Then return the ribs to the roasting pan without the rack.

Drizzle on 1 1/2 cups of the sauce and bake for another 30 minutes. Remove from the oven. Reheat the remaining sauce that is in the saucepan then shut off.

Cut the ribs into pieces. Brush the remaining sauce onto the ribs and serve.

Cheesy Mac Shells:

Bring a large pot of water to a boil. Salt the water with 1/2 teaspoon salt. Add the pasta and cook for 8-10 minutes. Do a taste test and when tender, drain pasta and set aside.

While the pasta is cooking make the cheese sauce.

In a medium size pot, whisk the milk and flour together. Bring to a boil and stir as needed so you do not scorch the milk. It should thicken up as it is cooking. Reduce to a simmer and cook until thick. Remove from heat and add the grated cheese a little at a time so it melts. Stir in to make a creamy cheese sauce.

Pour over the cooked pasta and stir to combine. Do a taste test and add salt and pepper as needed.

Time cooking your pasta so it is hot and ready at the same time as the ribs. Serve and enjoy.
