This sweet chicken meatball recipe has a sweet chili sauce that is bursting with flavor.
Place all the ingredients into a large mixing except red and yellow peppers and canned tomatoes.
Stir together, using a wooden spoon.
Cover with plastic wrap and place into the refrigerate for an hour.
Form 2 inch balls using your hands. If the mixture is too dry, then add a bit more sweet chili sauce.
If it is too wet then add a bit more bread crumbs.
Place the meatballs onto a plate as you make them.
Lightly oil a and heat a large frying pan over medium heat. Add the meatballs and cook, turning occasionally until cooked through.
Remove meatballs into a bowl.
Add the red and yellow peppers to the frying pan and cook for a few minutes until tender. Add the diced tomatoes and simmer for 5 minutes.
Return the meatballs to the frying pan, bring to a boil then turn down and let simmer for 5 minutes.
Serve with freshly grated parmesan cheese if desired.
