Sweet 'n' Hot Onion Rings Recipe

Crispy sweet n' hot onion rings. The perfect fried food treat for those days that you just feel like it! These are made with sweet onions and a zesty batter.

Ingredients

Serves 6

2 large sweet yellow onions, cut into 3/8-inch-thick slices and separated into rings

2 1/2 cups all purpose flour
1/2 cup cornstarch
1/4 cup granulated sugar
3 Tablespoons baking powder
1 Tablespoon ground red pepper
2 teaspoons salt
2 cups club soda

Vegetable oil for frying

Directions

Peel the outside skin off the onion then cut into 3/8 inch thick slices. Separate into rings.

Make the coating. In a deep bowl stir together the flour cornstarch, sugar, baking powder, ground red pepper and salt.

Once combined, stir in the club soda a mix in.

In a dutch oven or deep sided heavy bottom frying pan, heat two inched of oil over medium heat to 370F. Do not overheat or it will smoke and burn.

Dip each onion ring into the batter, allow excess to drip back into the bowl. Gently drop a few onion rings at a time into the heated oil. Total cooking time is 5-6 minutes or until golden. Flip at the half way time so they cook evenly.

Remove with tongs onto a plate lined with paper towels.

Tip: Test the heat of the oil with the first onion ring you cook. If it is too hot it will smoke and cook too quickly, causing the outside to burn. Keep the oil at the correct temperature as you cook all the batches.
