Ingredients

2 1/2 cups all purpose flour
1/2 cup cornstarch
1/4 cup sugar
3 Tablespoons baking powder
1 Tablespoon cayenne pepper
1 teaspoon paprika
2 teaspoons salt
2 cups beer or club soda
vegetable oil ( for frying)
2 large sweet yellow onions, cut into 3/8 inch slices and separated into rings

(Serves 4)

Directions

Combine flour, cornstarch, sugar, baking powder, cayenne, paprika and salt together in a large mixing bowl.

Gently pour in the club soda (or beer) and whisk until well combined.

Pour 2-inches of oil into a large sturdy sauce pan. Set over medium-high heat and heat to 350ºF.

Once oil is heated, dip one onion ring into the batter, allowing excess batter to drip off, and carefully drop onion into the hot oil. Fry a few onions at a time, being careful not to over crowd the saucepan.

Fry for 3 minutes, then flip onion rings and continue frying for another 3 minutes, until golden.

Transfer cooked onion rings to a paper towel lined plate to drain.

Continue with the remaining onions.

Serve immediately.
