Sweet Potato Nachos Recipe

1 x large sweet potato, sliced into small chips.
Olive oil for roasting.
Salt and pepper to season.

1 cup grated cheddar/mozzarella.
1 tomato, chopped fine.
˝ an onion, chopped fine.
˝ teaspoon dried chili flakes.
Salad sprinkles or dried oregano.
1 avocado, mashed.
Salt and pepper for avocado
1/2 teaspoon white vinegar for avocado mash
1 tablespoon of sour cream


Preheat oven to 400F.

First off, season, drizzle with olive oil and roast the sweet potato slices on a baking sheet lined with parchment paper. Don't stack the potatoes or they will not crisp up. Bake until potatoes are done. Test by poking potatoes after 15 minutes with a fork.

Top the sweet potato with cheese and return to the oven until the cheese is melted and boiling.

Serve with tomato, onion and dried chilli flake “salsa”, followed by salad sprinkles or dried oregano, generous spoonsful of guacamole and sour cream. Serve immediately.
