Add this dish to your menu, its healthy economical and full of protein
Open the can of beans and dump into a colander. Drain the juices out and rinse the beans.
Place beans into a mixing bowl.
Finely chop the red onion and pimento.
and squeeze the lemon. Add all to the beans and stir in.
Let it sit while preparing the other ingredients.
In a small bowl stir together the vinegar, oil and dried herbs.
Pour over the bean salad. Stir in and add a little salt and pepper to taste.
Sprinkle with freshly chopped parsley and stir in to combine.
Cover with a plastic wrap or lid and refrigerate for a few hours to immerse the flavors.
Serve cold as a salad.
