Twice Baked Potato Casserole Recipe

Ingredients

6 medium potatoes, baked
1/2 teaspoon salt
1/4 teaspoon pepper
1 lb bacon, cooked and drained
3 cups sour cream
2 cups shredded mozzarella cheese
2 cups shredded cheddar cheese
2 cups of salsa (mild, medium or hot - depending on your taste)
* Oil or butter for drizzling

Directions

Over medium heat cook the bacon strips until for 5-6 minutes on each side.

Remove from pan and place onto paper towels to drain the fat.

Once cool, on a cutting board chop the bacon into small pieces about 1/2 thick and set aside.

Preheat your oven to 350F.

Peel and wash potatoes and slice into thin rounds.

Grease a 9x13 inch baking dish with butter or oil.

Lay half the potatoes into the baking dish.

Sprinkle with half the salt, pepper, and bacon bit.

Top with half the sour cream, 1/2 the salsa and 1/2 the shredded cheeses.

Lay the remaining potatoes and top and season with remaining salt pepper and a drizzle of oil or some bits of butter.

Bake, uncovered at 350F for 25 minutes.

Top with the rest of your bacon, salsa and cheeses and bake for another 15 minutes.
