Vanilla Cupcake With Pink Frosting Recipe

A delicious vanilla cupcake recipe with fun pink frosting

Ingredients

Cupcake
1 cup cake flour
1/2 cup whole milk
3 large egg whites
1 teaspoon vanilla extract
3/4 cup granulated sugar
2 teaspoons baking powder
1/2 teaspoon salt
5 tablespoons unsalted butter, softened

Icing
3/4 cup butter, at room temperature
1/4 cup cream cheese at room temperature
1 bag powdered sugar, more as needed.
2-3 tablespoons milk
1 tablespoon vanilla extract
a pinch of salt
pink food coloring

Directions

Preheat the oven to 350˚ F.

Line twelve standard size cupcake cups with paper liners.

Whisk milk, egg whites, and vanilla extract in large glass measuring cup.

In the bowl of an electric mixer combine flour, sugar, baking powder, and salt. add butter; beat at low speed until mixture resembles moist crumbs,

Add the milk mixture to the crumbs and beat at medium for 2-3 minutes.

Evenly distribute the batter in the cupcake tins, filling the cups 2/3 full.

Bake for 25 minutes, or until a toothpick inserted in the center comes out clean. Let cool on a wire rack.

To make the frosting, Beat the butter and cream cheese on medium until well blended, reduce speed to low and gradually add powdered sugar, add milk, 5-6 drops food coloring and vanilla. Increase to medium speed and mix for 5 minutes. (if frosting is too thick add more milk a tbsp at a time)

Frost cooled cupcakes. Decorate with cupcake candies of your choice.
