Vanilla Muffins With Chocolate Sauce Recipe

A very yummy recipe for sweet vanilla muffins with a creamy chocolate sauce.

Ingredients

Muffins
2 cups flour
1 tbsp baking powder
1 tsp salt
1/4 cup sugar
2 eggs, slightly beaten
1 cup milk
8 tbsp butter, melted
1 tsp vanilla extract
Chocolate Sauce
1 cup water
1/2 cup sugar
1/2 cup light corn syrup, or agave nectar
3/4 cup unsweetened cocoa powder
1/4 cup bittersweet or semisweet chocolate, finely chopped

Directions

Preheat the oven to 400°F Grease muffin pans and set aside.

Stir together the flour, baking powder, and salt. Place the sugar, eggs, milk, butter, and vanilla in a large bowl and mix well. Add the combined dry ingredients and mix just until the batter is blended.

Spoon the batter into the prepared muffin pans, filling each cup about two-thirds full.

Bake for 18-20 minutes, or until a toothpick inserted in the center of a muffin comes out clean. Remove from the pans and let cool.

For the chocolate sacue. In a medium saucepan, whisk together the water, sugar, corn syrup (or agave), and cocoa powder. Bring to a boil over medium heat. Once it’s just begun to simmer and boil, remove from heat and stir in the chopped chocolate until melted. let the Chocolate Sauce stand for awhile before serving, which will give it time to thicken a bit.

Dip Muffins in sauce or pour alittle sauce over the top on a serving plate.
