Vegetarian Broccoli Stir Fry Recipe

A Very tasty recipe for vegetarian stir fry. Enjoy on its own or serve over rice or noodles.

Ingredients

2 tablespoons cornstarch
1/2 cup water
2 tablespoons water
2 cloves garlic, crushed
2 tablespoons vegetable oil
3 cups broccoli florets
2 cups celery, sliced
2 cups bamboo shoots, sliced
1/2 cup black beans, drained
1/4 cup peanuts, toasted
1 small onion, sliced
1/3 cup reduced sodium soy sauce
2 tablespoons brown sugar
1 teaspoon ground ginger

Directions

In a small bowl, combine 2 tablespoons cornstarch, 2 tablespoons water until smooth.

In a large skillet or wok over medium high, heat oil and garlic, Stir-fry broccoli celery, black bean and onion for 4-5 minutes.

Combine soy sauce, brown sugar, ginger and cornstarch and water until smooth; add to the pan. Cook and stir for 2 minutes.

Stir in peanuts.
