Yellow Layer Cake With Fluffy White Frosting Recipe

A very yummy recipe for yellow layer cake with fluffy white frosting.

Ingredients

Yellow cake
1 cup butter (room temperature)
2 cups of sugar
4 eggs (room temperature)
3 cups self-rising flour
1 cup of whole milk (room temperature)
1 teaspoon pure vanilla extract

Frosting
1 Cup agave nectar or honey
1/4 tsp. cream of tartar
2 egg whites
1 tsp vanilla
pinch of salt

Directions

Preheat oven to 350 degrees. Grease and flour (3) 8 inch cake pans.

Using a mixer, cream butter until fluffy. Add sugar and continue to cream for about 5 minutes. Add eggs one at a time. Add flour and milk and vanilla cream until just mixed.

Divide batter equally into three cake pans.

Bake for 25 � 30 minutes until done. Cool in pans for 5 � 10 minutes.

Remove and Cool completely on wire racks.

For the frosting. In a saucepan, mix together the agave nectar and cream of tartar, bring to boil, stirring constantly. reduce heat to low and let simmer. Stir occasionally.

While that�s simmering, beat the egg whites and vanilla until foamy. Add a pinch of salt and continue beating until it forms hard peaks. This takes from 3 to 5 minutes. Turn the speed to low on your mixer and pour in the agave mixture. Beat on medium high until the frosting in glossy and well combined, 2 to 3 minutes.

To Assemble place one cake layer on a serving platter and top with frosting, alternate until all layers are used and spread frostingover top and down sides.
