An easy recipe for a delicious zucchini and mushroom dish, Great served over noodles or rice.
In a large skillet, heat oil to medium high.
Saute the garlic for 2 minutes or until softened and golden, but no burnt.
Add sliced mushrooms and cook 1-2 minutes on each side until browned slightly.
Transfer to a small bowl and set aside while you cook the zucchini.
Without washing the pan, add sliced zucchini evenly to the pan and cook for 2-3 minutes on each side until slightly golden.
Lower the heat to medium then add in the soy sauce, balsamic vinegar, ginger to the skillet and stir to coat.
Add mushrooms back to pan and stir together to warm them back up.
Remove from heat and stir in greeen onions to serve.
