Classic Lasagna Roll Ups

Ingredients

  • Makes nine rolls in a 99 pan. If using 913, increase number of lasagna noodles
  • 2 tablespoons extra-virgin olive oil
  • 3/4 pound ground beef
  • 1/2 medium yellow onion, finely chopped
  • 28-ounce can crushed tomato
  • 2 cloves garlic
  • 1/2 tablespoon dried basil
  • 1/2 teaspoon dried oregano
  • Salt and pepper
  • Nine lasagna noodles
  • 15 ounces ricotta cheese
  • 1 egg
  • 1/3 cup flat-leaf parsley
  • 2 1/2 cups mozzarella cheese
  • 1 cup Parmesan cheese

Directions

  1. Preheat the oven to 375 degrees. Drizzle half of the olive oil into a large frying pan, and brown the ground beef. Add chopped onions and continuing stirring and breaking up the meat until cooked. Add the garlic, crushed tomatoes, basil and oregano.
  2. Boil the lasagna noodles, drain and lay them flat on a piece of wax paper, cutting board or baking sheet. While the pasta is cooking, mix the ricotta and egg. Add salt and pepper, and then mix in 1 3/4 cups shredded or grated mozzarella and cup Parmesan cheese.
  3. Spread 1/2 cup of the meat sauce over the bottom of a baking dish, ensuring the surface is covered. Spoon approximately 1/4-cup cheese mixture onto each lasagna noodle, and then spoon some meat sauce on top of the cheese. Eyeball the proportions, but dont overload the noodle. Roll up the noodle and place it seam-side-down in the baking pan. Repeat with remaining noodles.
  4. When the pan is full, cover all the rolls with remaining meat sauce and then top it with remaining cheese. Bake the rollups for 35 minutes and garnish with additional chopped parsley.
