In the mood for something sweet? Buttercrunch Bites are a homemade version of a confectionery that is similar to Almond Roca. This version is without any nuts, but you could sprinkle some toasted almonds on top if you are looking for that nutty texture and flavor.
Line a 9x13 cake pan with aluminum foil and grease generously with butter. Make the piece of aluminum foil large enough that it extends up the sides. This will make for easier removal of the candy.
Melt the butter in a medium size saucepan over low heat.
Once the butter has melted stir in the sugar, water and corn syrup and bring the mixture to a boil. Boil until the temperature reaches 300F. on your candy thermometer. This can take about 20 minutes to get to temperature.
Pour the mixture onto your prepared baking sheet and let set.
Meanwhile, place the chocolate chips into a small saucepan and heat over low. When the chocolate has melted drizzle on top of the buttercrunch candy. Use a heat resistant rubber spatula to spread out evenly on the top.
*Note: If you decided to use nuts, this would be the time to sprinkle on top of the melted chocolate and gently press down with the spatula to secure them onto the chocolate.
Allow to cool, then lift the buttercrunch from the pan and use a large sharp knife to cut/break into pieces.
