Chocolate Cake And Marshmallow Frosting Recipe

This chocolate cake recipe makes a makes a moist, delicious two layer cake that is filled and coated withmarshmallow frosting.


Chocolate Cake
2 cups granulated sugar
1 3/4 cups flour
3/4 cup cocoa powder
1 1/2 teaspoons baking powder
1 1/2 teaspoons baking soda
1 teaspoon salt
2 eggs
1 cup milk
1/2 cup grape seed oil
2 teaspoons vanilla extract
3/4 cup boiling water

Marshmallow Frosting
8 large egg whites
2 cups granulated sugar
1/8 teaspoon salt
2 teaspoons vanilla extract

Coconut Flakes

Serves 6 - 8


Chocolate Cake

Preheat oven to 350F

Grease and flour 2 - 9 inch round cake pans with butter.

Whisk together sugar, flour, cocoa powder, baking powder, baking soda and salt. Mix in eggs, milk, oil, vanilla until well incorporated. Add boiling water and mix until it has incorporated.

Pour batter into prepared pans and bake for 30 - 35 minutes, or until an inserted toothpick comes out clean. Set to cool, once cool enough to touch turn cakes out of pans and let cool completely on a wire rack.

Marshmallow Frosting

In a bowl over a pot of simmering water whisk egg whites, sugar, and salt until sugar and salt has dissolved.

In a mixer whip together egg white mixture and vanilla to soft peaks.


Frost in between layer of cake, on top and on the sides of cake. Press coconut flakes into sides and sprinkle on top.
