A quick and easy cookie recipe that is perfect with a cup of afternoon tea.
Preheat oven to 350°F . Line 2 cookie sheets with parchment paper.
Cream the butter and the sugar together until light and fluffy. Add the vanilla and almond extracts and mix.
Add the flour and almond flour. Mix thoroughly.
Scoop a heaping tablespoon of the dough and roll it into a small ball, about an inch in diameter, press down slightly with the back of a spoon.
Press an almond into the top of each cookie.
Bake for 15 minutes.
Dust with additional confectioners sugar while hot.
Remove to wire rack to cool.
