Apple Cider Glazed Meatballs Recipe

You can use a variety of ground meat to make these apple cider glazed meatballs. They are delicious with rice!

Ingredients

Meatballs:
1/3 cup shredded apple
1 1/2 lbs. ground pork, chicken, or turkey
3 garlic cloves, minced
3 Tablespoons onion, finely diced
1/3 cup bread crumbs
1/2 teaspoons cayenne
1 teaspoon salt
1/2 teaspoon pepper

Glaze:
1 cup apple cider
1/4 cup soy sauce
1 teaspoon freshly grated ginger
1 teaspoon apple butter
3 Tablespoons brown sugar
1 teaspoon red pepper flakes
1 Tablespoon chili garlic sauce
1 1/2 teaspoons cornstarch
1/2 teaspoon salt
1/4 teaspoon pepper

Directions

Meatballs:

Preheat oven to 400 degrees F.

Line a baking sheet with aluminum foil.

Place a cookie grate on top that fits the baking sheet.

Wash, peel and shred the apple. Place shredded apple onto a paper towel and squeeze out any moisture.

Place all the meatballs ingredients into a large bowl and stir together. Use your hands to combine and roll into 1-inch balls.

Arrange the meatballs on the grate, place into the preheated oven and bake for 20 minutes, or until cooked through.

Remove from the oven.

Glaze:

Place all of the ingredients into a large skillet and heat over medium heat. Bring the mixture to a gentle boil and let simmer for 2 minutes until the glaze thickens.

Place the baked meatballs into the skillet and let cook for a few minutes, stirring gently to coat.

Delicious served with rice.
