Fresh apples are used in this apple streusel muffin recipe. These muffins smell wonderful when baking and you can feel very good about putting these homemade muffins into your families lunch boxes.
Preheat oven to 375F.
Line 12 muffin cups with paper liners.
Streusel Topping
In a small bowl, combine the brown sugar and flour.
Cut the butter into small pieces using a pastry cutter then use your fingertips to combine with the sugar and flour mixture forming large clumpy pieces.
Muffins
Wash, peel, core and grate the apples, set aside.
In a large bowl, combine the flour, sugar, baking powder, baking soda, cinnamon, nutmeg, allspice, cloves and salt.
Melt the butter over low heat in a small saucepan. Turn off the heat and let cool down.
In another medium sized bowl combine the eggs, melted butter, and sour cream and whisk until well combined.
Mix the wet ingredients into the dry ingredients.
Add the grated apple and stir until just combined. Do not over mix.
Divide the batter evenly into the prepared muffin pan. Divide and put the chunky streusel pieces over tops.
Place into the preheated oven and bake for 20 - 25 minutes until the top of the muffins are browned and a toothpick inserted into the center of the muffin comes out clean.
