Talk about a simple and delicious appetizer! These bacon wrapped pork pieces with melted cheese smell and taste fantastic.
Preheat oven to 425F.
Line a baking sheet with aluminum foil and grease lightly with olive oil.
Cut the pork loin into finger size pieces. Cut the bacon strips in half and wrap each piece of pork with the bacon.
Place the wrapped pieces onto the baking sheet and be sure to leave space between each one so the bacon will crisp.
Place into the preheated oven and bake for about 20 minutes.
The temperature on a meat thermometer should be 145F.
When cooked, carefully slide the baking sheet out and turn the oven to broil.
Sprinkle the shredded cheeses on top and place back into the oven under the broiler for a couple of minutes. BE VERY CAREFUL NOT TO BURN the cheese. Watch it the whole time.
Remove from the oven and let sit for about 5 minutes before serving.
