Baja Fish Tacos Recipe

A very yummy fish taco recipe.


Makes 8 tacos

1 lb (454 g) bass fillets
1 Tablespoon olive oil
1 teaspoon chili powder
1/2 teaspoon dried oregano
1/4 teaspoon salt
1/4 teaspoon pepper

1/2 cup shredded carrots
1/4 cup thinly sliced red onions
1 teaspoon lime juice
1/4 cup plain whole yogurt
1 Tablespoon minced fresh coriander
1 green onion, minced
8 six inch corn tortillas
1 plum tomato, diced
1/2 avocado, peeled and diced


Preheat oven to 375 degrees F.

Line a baking tray with parchment paper and set said.

In a shallow bowl, combine oil, chili powder, oregano, salt and pepper; add fish and turn to coat.

Bake for 10-12 minutes until fish flakes easily when tested, about 5 minutes.

Meanwhile, in small bowl, combine carrot, red onion and lime juice.

In separate small bowl, combine sour cream, avocado, coriander and green onion.

Break fish into chunks; divide among tortillas.

Top with sour cream mixture, carrot mixture and chopped tomatoes.
