Baked Cauliflower Casserole Recipe

This baked cauliflower casserole recipe make a tasty dish to serve along with a nice salad, and entree of your choice.


2 Tablespoons olive oil
1 egg, beaten
1 teaspoons salt
1/2 teaspoon black pepper
1/2 teaspoon garlic powder
4 cups cauliflower florets
1/2 cup sliced shallots
1/4 cup parmesan cheese
2 slices toasted whole wheat bread broken into chunks

Serves 2-4


Preheat oven to 400F.

Grease a baking dish.

In a large mixing bowl, mix the oil, egg and seasonings together.

Add the cauliflower florets, shallots, bread chunks and parmesan cheese and toss in to coat.

Transfer the mixture into the prepared baking dish.

Place into the preheated oven and bake for 30 minutes.

Serve right away.
