This baked fish patties recipe, is a great way to use some leftover fish and mashed potatoes.
Preheat oven to 450F degrees. Grease a cooking sheet with nonstick cooking spray.
Combine the mashed potatoes and flaked fish in a mixing bowl. Form the patties using your hands.
Combine mayo, parmesan cheese, lemon juice, anchovy paste and salt and pepper.
Spread mayonnaise mixture on both sides of the fish patties and then dip into the breadcrumbs.
Place fish on pan. Bake 15 to 20 minutes or until fish is cooked through and bread crumbs begin to brown.
Serve with lemon wedges.
