This baked potato and broccoli is a basic, easy meal to make and is very tasty served with sour cream. Turns a plain potato meal into a colorful appealing dish.
Preheat the oven to 400 degrees F.
Scrub the potatoes and pierce with a knife.
Bake for about one hour, poke a sharp knife into the potato to see if done.
Remove and let the potatoes cool enough to handle.
Using your hands, to squish and soften the potatoes.
Slice the tops open.
Divide the steam broccoli florets onto the 4 potatoes and sprinkle on the shredded cheese.
Place the potatoes into an oven proof dish and return back to the oven for 5-10 minutes to melt the cheese.
Season with salt and pepper.
Delicious served with sour cream.
