Ingredients
For the Beef:
1 boneless beef chuck-eye roast (about 4 � 5 pounds)
1 tablespoon table salt (iodized salt)
1 tablespoon freshly ground black pepper
1 teaspoon cayenne pepper
3 cups wood chips, soaked for 15 minutes
6 soft hamburger buns
For the Sauce:
1 onion, finely chopped
4 garlic cloves, minced
1/2 teaspoon chili powder
1 1/4 cups ketchup
3/4 cup strong brewed coffee
1/2 cup cider vinegar
1/2 cup packed brown sugar
3 tablespoons Worcestershire sauce
1/2 teaspoon freshly ground black pepper
For the Coleslaw:
1/2 small head green cabbage, finely shredded
1/2 small head purple cabbage, finely shredded
3 large carrots, peeled and grated
1 cup mayonnaise
2 tablespoons Dijon mustard
1 tablespoon whole grain mustard
1 tablespoon plus 1 teaspoon cider vinegar
1/2 teaspoon celery salt
1/4 teaspoon Kosher salt
1/4 teaspoon freshly ground black pepper
3/4 cup (about 3 ounces) crumbled blue cheese
1/2 cup parsley, coarsely chopped
