Caprese Gratin Recipe

A Lovely Caprese gratin recipe. This flavorful dish is great served with a crusty bread.


3 tomatoes
1 1/2 cup coarse breadcrumbs
2 cloves garlic, finely chopped
1 Tablespoon basil, minced
1 lemon rind, grated
1/2 teaspoon salt
1/4 teaspoon pepper
3 Tablespoons olive oil, divided
1 Tablespoons white balsamic vinegar
1 cup mozzarella, grated
2 Tablespoons basil, for garnish


Preheat oven to 400 degrees.

Grease an 8 inch square baking dish.

Cut the tomatoes into 12 thick slices. Place tomato slices in a colander to drain.

In a large bowl, combine breadcrumbs, garlic, basil, lemon peel, salt, pepper and 2 Tablespoons oil, mix thoroughly.

In a small bowl, whisk the remaining olive oil with the balsamic vinegar. Set aside.

In baking dish, spread the bread crumb mixture.

Place tomato slices on top.

Sprinkle with cheese.

Drizzle with olive oil/balsamic dressing.

Bake 20 minutes until cheese bubbling and golden.

Remove and let sit for 10 minutes before serving.

Garnish with basil.
