This caprese sandwich recipe is so simple to make. It is perfect on a summer day.
Cut the english muffin in half and arrange each half on a plate.
Spread 1/2 Tablespoon of pesto over each english muffin.
In alternating layers, arrange the tomato and mozzarella slices over the english muffin. Sprinkle some chopped basil, and tiny pinch of salt and some fresh ground pepper between each layer as you go.
Top the sandwiches with a few cherry tomato halves.
Once finished layering, drizzle over a small amount of olive oil, grind over some fresh black pepper, sprinkle the remaining fresh basil and add another tiny pinch of salt.
