Cheese Basil And Fresh Tomato Bruschetta Recipe

A recipe for a warm gooey Cheese Basil and Fresh Tomato Bruschetta


1 loaf rustic country bread or crusty baguette, cut 1/2 inch thick slices
1/2 cup extra virgin olive oil
2 teaspoons dryed basil or fresh basil chopped
2 fresh crushed garlic cloves,
1 cup Emmental cheese, grated
1 cup Mozzarella cheese, grated
fresh basil leaves
1 or 2 fresh tomatoes, sliced


Preheat the oven to 350 degrees F.

Whisk the crushed garlic and chopped basil into the olive oil.

Slice the bread into 1/2 inch thick pieces. Brush the tops with the olive oil, garlic spread.

Lightly toast the bread on a baking sheet in the oven.

In a bowl, mix together the grated cheeses.

Put the grated cheese freshly sliced tomatoes onto each piece of toast. Return to the oven to cook for 2-3 minutes, or until the cheese is melted and bubbling. Garnish with fresh basil leaves and serve warm.
