These delicious easy to make cheesy mashed potato patties will be a hit.
This recipe works best when using chilled mashed potatoes, so good to plan ahead. This is a wonderful recipe to use up leftover mashed potatoes.
Place the potatoes, cheddar cheese, chopped onions, beaten egg and 3 tablespoons of flour into a large mixing bowl. Stir together to combine, and use your hand to divide the mixture into 12 even portions. If the mixture seems to dry, you can add an extra egg. If the mixture is too wet, add a little more flour.
Shape each portion into a ball, then flatten into a pattie about 1/2 inch thick.
Place the remaining 1/2 cup of flour in a shallow dish and dredge each pattie in the flour.
Using a large skillet, spoon just enough vegetable oil to coat the entire bottom of the pan and heat the oil over medium heat.
Fry the potato patties in batches for about 3-4 minutes, until they're golden brown and crispy on both sides. Don't over crowd in the pan and do not flip until the bottom has a crispy texture.
Add more oil to the pan as needed between batches.
Transfer the potato patties to a plate line with paper towels. While they are still hot sprinkle a little salt on each.
Continue until all are cooked.
Delicious served with sour cream.
