Cheesy Zucchini Casserole Recipe

This cheese zucchini casserole recipe is so easy to make and will go great with so many meals or you can have it a meal on its own, served with a colorful tomato salad.


1/4 cup butter, melted
1 large onion, chopped
1 teaspoon garlic salt
1 egg, beaten
4 slices white bread, cubed
2 cups zucchini, sliced thin
2 cups cheddar cheese, shredded
1 green onions, chopped


Preheat oven to 350F.

Grease a 9x13-inch baking dish with butter. Set aside.

In a medium bowl, combine the melted butter, onion, garlic salt and egg.

Mix in the bread cubes.

Gently fold in the zucchini and mix until well combined.

Transfer the mixture to the prepared baking dish and spread evenly.

Top with the cheese.

Cover baking dish with aluminium foil and transfer to the preheated oven.

Bake for 30 minutes.

Remove the foil and bake, uncovered, for another 30 minutes.

Remove from oven and sprinkle over the green onion.

Serve hot.
