Chicken And Corn Kebabs Recipe

A Great easy recipe for chicken and corn kebabs served with potato wedges and an arugula salad.


4 cobs of corn, cut into 2 inch rounds
4 chicken breasts, cut into bite size cubes
1 red pepper
1 green pepper
2 teaspoons olive oil
1 teaspoon salt
1/2 teaspoon pepper

4 medium sized potatoes, washed
2 teaspoons olive oil
2 cups arugula


Preheat oven to 400 degrees F.

Cut potatoes into wedges, toss in olive oil and arrange on a baking sheet.

Bake potatoes for 35 minutes or until crispy outside and tender inside.

Heat grill to medium.

Toss chicken in oil and sprinkle with salt and pepper.

Cut peppers into bite sized pieces.

Thread chicken, corn, and peppers onto skewers.

Grill kebabs 8-10 minutes turning occasionally until the chicken is cooked through.
