Chocolate Brownie Bites Recipe

This little recipe for chocolate brownie bites makes 24 bites of heaven.


1/2 cup butter
1/4 cup semi-sweet chocolate chips
3/4 cup granulated sugar
1/4 cup brown sugar
2 eggs
1 teaspoon vanilla
1/2 cup all-purpose flour
1/4 cup cocoa powder
3/4 teaspoon baking powder
1/4 teaspoon salt

Chocolate Icing
2 ounces unsweetened chocolate chips or squares
1/2 cup butter, at room temperature
1 cup confectioners' sugar
3 Tablespoons whipping cream
1 teaspoon vanilla

Makes 24 mini brownies


Preheat oven to 350F.

Grease a mini muffin tin with oil.

Melt butter and chocolate in a small pot, set to cool.

Beat both sugars and eggs, until mixture thickens. Add cooled chocolate and mix till well incorporated.

In a separate bowl whisk together flour, cocoa powder, baking powder, and salt. Add this to wet mixture, and mix till well incorporated.

Fill prepared mini muffin tin with brownie batter 3/4 of the way.

Bake for 12 - 15 minutes, or until an inserted toothpick comes out clean. Set to cool.

Chocolate Icing

In small saucepan, melt chocolate over low heat then let cool.

In large bowl, beat butter until fluffy, then add sugar and cream.

Beat in melted chocolate and vanilla, put into a piping bag and pipe onto the mini brownies.
