This chocolate cookie cheesecake will remind you of your childhood.
Preheat oven to 325F.
In a small bowl mix together, chocolate graham cracker and melted butter. Pour this into a 9 inch spring form pan, and press down tightly. There should be a nice layer on bottom of pan. Set in refrigerator.
In another bowl, beat together cream cheese and sugar until smooth, mix in vanilla. Beat in eggs one at a time until they are mixed in. Add in your coarsely chopped cookies, and mix in slowly. Pour into your prepared pan, and bake for 50 - 60 minutes. Let cool for about 10 minutes, then run a knife around edge to loosen from pan. Let cool completely and then cover and refrigerate over night.
In small saucepan, melt chocolate over low heat then let cool.
In large bowl, beat butter until fluffy, then add sugar and cream.
Beat in melted chocolate and vanilla.
Spread icing over cheesecake and serve.
